PRIVATE-LABEL IPA OFFERINGS - AVAILABLE NATIONWIDE
We offer Private-Label craft beer - specializing in IPAs - and only utilize premium, all-natural, organic ingredients.
The aim of each batch of our Private Label IPAs is to enable our Hotel, Dining & Event Venue partners to elevate their respective guests' lodging and dining experiences through exceptionally crafted beverages.
In 2019, the team introduced iterations of our "core" IPAs for Hotel, Dining & Event Venue clients nationwide in cooperation with regional brewers. The formulations utilize our same recipes and tradition of quality, all-natural, organic (as of 2023) ingredients but are suitable to be brewed outside the NYC Watershed area due to our fine-tuning of the water utilized for each batch to mirror that of NYC tap water (specifically, that of the borough of Manhattan). By brewing in regions outside of the NYC Metropolitan area, we are able to reduce the transport time (as well as costs) for our Private-Label clients and - most importantly - optimize freshness for all of their customers who are ultimately enjoying our IPAs.
We have a team of in-house and regional consultants who assist each of our brewing partners with the calibration of the pH (slightly alkaline, registering at between 7.2 - 8.0) as well as the major mineral ions of NYC tap water (including magnesium and calcium) so that the water utilized to brew batch has similar characteristics to that of Manhattan's tap water. To that end, our baseline tap water samples are taken in the winter months - from the borough of Manhattan- when the chlorine levels tend to be a bit lower compared to summer months. Our team also accounts for minerals that were likely picked up during transport via aging pipes as the water finds its way from the primary source waters of the Delaware basin and Catskills reservoir systems to residents' taps - notably, other boroughs may draw from just one primary system and/or feature the Croton system as it tends to have a bit harder water profile, these variations in source water can shift the pH and ion profile even though all source waters undergo the same extensive treatments prior to reaching the taps of NYC citizens from the 5 boroughs.
The goal of calibrating the water utilized in our brewing process to reflect that of the NYC borough of Manhattan is to give our NA, Cold & White IPAs a unique crisp quality, as neutral to slightly alkaline waters tend to do (the harder water profiles favor our Black IPA), and provide for consistent flavor-profiles no matter where they are brewed with the NYC Watershed area, Nationally or even internationally.

The NYC Water Supply System is comprised of 19 reservoirs and three controlled lakes and spreads across a 2,000-square-mile watershed. The watershed is located in portions of the Hudson Valley and Catskill Mountains, with areas that are as far as 125 miles north of New York City.
The New York City Water Supply System consists of three individual water supplies:
- The Catskill Water Supply System, located in Ulster, Greene, Schoharie, and Delaware counties
- The Delaware Water Supply System, located in Delaware, Sullivan, and Ulster counties
- The Croton Water Supply System, located in Putnam, Westchester, and Dutchess counties
